It seems there is no way to disable timeshift with TvServer (due to its architecture).
So I was wondering if continuously using hard disks does not damage them ?

No, and TVServer does not continually timeshift, only when in use, ie accessing a channel watching\recording\grabbing epg.
Most of the time mines sitting idle.

You can use a ramdisk as timeshift disk, this saves your hard disk and you have a silent solution.

Ho, I was talking about the situation where I'm watching TV (lets say about 3 hours a day and more the week end). In such case timeshift makes hard disks access during all the time I'm watching TV isnt'it ? So how can hard disk be idle ?
