What would be cool, would be if someone could list all the items in services.msc and msconfig that can be disabled, or if someone could list what services are essential to mediaportal running.

I agree, there are multiple stripped down versions of Windows XP available.
One version i saw only required 50 mb of ram to be running and took up 600 mb of space fully installed.

Let me see if i can do something similar.... so far i am working on stripping down xp.. will take some time and effort but certainly doable !!

I installed Mediaportal on a minimal install of windows XP SP3 and it has been working so far..

I removed,

Character Map,
MSN Explorer,
Internet Games,
Old Driver,
Tablet PC,
Windows Messenger,
Security Center,
Help and Support,
IMAPI CD-Burning COM Service.
