New to this, have installed and got Ultimate Fighter, Family Guy & South Park showing up but for some reason other series are not showing up. I've manually added episodes for the above, but how do I add/force the program to add a series or to re-check, i've tried renaming a few and pressing the 'import' button but that doesnt seem to help?

for example 'only fools and horses' is one i've got that isn't showing up in Media Portal

You will have to give more detail and log files. For example, what is your import paths, what is the name (exactly) of the missing files?
