From memory, when adding channels in the TV part of MediaPortal Setup, there is a button in amongst the tuner channel buttons somewhere that says something like 'CVBS/SVHS'. This adds a channel to MP with its input coming from your S-Video or Composite input port instead of the TV tuner.
