Some things are only stored in its own library.xml file. I don't know exactly which modifications go into the ID3 tags and which don't, and it's not really documented. So you can either tag your music outside iTunes or use a freeware tool like "iTunes store file validator" (google for itsfv) to force updates to the ID3 tags from within iTunes.
