DVD space saving options? (1 Viewer)

Hello all, building (resurrecting) an old PC of mine into a HTPC. First time for me, and I'm no newcomer to ripping DVDs. Keeping them on your HDD, and a database at that, I am new to. I would love to entertain the fact of keeping the entire DVD (menu and all), but even with the 1.5TB HDD I plan on installing there is only so much space. I know I can lower the quality of the DVDs to save a couple gigs, but I need my video quality!

Longs story short, Are there any features I can retain, like chapters or optional subtitles? those both I can see myself using the most. Thank you for any and all answers!

Actually, i find myself needing a good program to convert the DVD rips to a video file. What would be the best for quality?
