I'm considering using Media Portal.

I'm confused a bit about the versions.

I guess there is a version which is "stand alone"?
- Does this stand alone version record to a directory or to a SQL database?

And there is a server version? Is this correct?
- What needs to be done, if anything, for the server version to use SQL 2000?

The "server" in Media Portal refers to the tv portion that is responsible for the recordings
"clients" connect to the "server" in order to watch recorded or live tv.

If you use one machine to record and watch tv then this is refered to as a "single seat" setup

The SQL component is a only needed on the "server" side. To store tv settings, program guide and recording information only
The "server" does not store the actual video recordings on the SQL database, it saves them on you hard drive in a folder

For the "clients" you don't need the SQL database installed.

Whether you setting up a client machine or server machine, you use the same installation file. During the setup process you will be asked what kind of configuration you are performing.

Have a look at the Wiki for installation, might shed some more light before you dive into the physical deployment
