I'm recording a series called 60 Minutes *
It comes out every Sunday at 7pm. For some reason Mediaportal has skipped recording this series for the last couple of months. Even though it is scheduled and I checked at 6:59pm. As soon as it hit 7.00pm Mediaportal did not record it.

Looks like it's getting aborted by the scheduler due to episode management.
You could try unchecking this setting in TV Server Configuration -> Recording page:

"Check episode of already recorded programs to prevent duplicate recording of repeated broadcasts"

Or perhaps try changing the "Episode key" value under that setting.
...There's quite a few database related errors in your logs too, but I don't think they're related to this issue.

    Yeah, what hurley said. :)

TV Server recognises you've got a series scheduled. However, it also recognises that you've enabled the "...prevent duplicate recordings..." setting. Therefore before it starts recording, it's always going to check whether the episode has been recorded before. When TV Server does the duplicate check for this particular episode, the check finds a match. Therefore TV Server does not start recording.

I suspect the episode info - number and/or name - for 60 minutes is the same for all episodes.

Well the thing that confuses me is that I have it set to "Episode Title". But since it's a series recording. Isn't the title always going to be the same?

Yes, the program title will always be the same... but the episode title is a completely different thing. It should be unique for each episode.
