As far as I remember you can adjust the position of the subtitles somewhere in the settings - but don´t remember where atm ;)
On the other hand, the OSD disappears after some time (you defined in the settings), and only the pause icon remains in the middle of the screen ;)
I'm talking about subtitles that are build into the video (like foreign language dramas). I don't think I can do anything about where they are displayed.
    Am I missing something?

Not sure, but can you try this:
In the Settings go to Screen set-up -> Screen calib. :
Press 2 times "Enter" and you see this screen:

    Maybe it works?

Talking about the pause bar, where do I find the field that tells you how far you have navigated forwards/back in time? I need to move that field together with the toolbar but I can't find it in videoFullScreen.xml.

I really wonder what you are doing
Just reduce the OnScreen display timeout (in settings, as I already mentioned above) to maybe 1 sec and you are done???
I want to move whole pause progress bar up to the top of the screen, including the skip steps +15, + 30, -15, -30 label. That way I can see the subtitle without any issues and the progress bar will behave exactly as normal.
Changing the OnScreen timeout did not have the affect I wanted. I want the pause bar to remain until I press play or move forward/back by using skip steps.

    common.play.xml ;)
I've attached a picture of what I had in mind for the pause bar demonstrating how it works with embedded subtitles.
I've inverted the Video_Tab_OSD_Pause.png image because I thought it looked a bit odd when at the top of the screen. I have flipped the program name and progress bar.
I have moved the skip step to the right of the remaining time field, above the current time; tricky to capture that happening though.
By doing that, I have been able to reduce the real estate taken up by the pause bar.
I hope this demonstrates why I wanted to make this change for my system. It's always easier to understand when you can see it;).
