Okay lacanox - I'm really trying to help but I'm struggling. Please read this post carefully because I can't be any clearer than this.
You appear to have two distinct problems:
1. When you try to view a channel in MP, you get an error message.
2. You're not seeing correct information in the TV guide.
These problems are not related.
To help you with problem one I need your MediaPortal and TV Server log files. To get them, please follow the instructions here:

In other words: start MediaPortal with the watchdog/debug tool, attempt to view a channel, close MediaPortal, post/attach the zip file produced by the watchdog/debug tool.
For the second problem: you posted your tvguide.xml file. I told you that the contents of the file is definitely invalid. That is why the TV Server XMLTV plugin can't import it and why the mapping tab shows each channel as red with no options in the guide channel column. To fix this problem you need to generate a valid XMLTV (tvguide.xml) file. From your first post I guess you're using XMLTV GUI to produce the tvguide.xml file. I think that your XMLTV GUI configuration may be incorrect. I don't know how to help you further with this problem because I've never used XMLTV GUI.
For the "where to find" part: you appear to have already found an XMLTV file. That's the tvguide.xml file that you posted above. So, I don't understand why you're looking for a file you already have.
For the "what they look like" part: this is technical detail that I think you could probably ignore. Nobody expects you to know what an XMLTV file looks like. If you're curious: fine. You can look at the attached example (which is my XMLTV file).
For the "what are they called" part: XMLTV files can be given any name you like. By convention they're often called "tvguide.xml", but there is no hard and fast rule about that.
