Picking the right codecs to minimise CPU load (1 Viewer)

I'm new to MediaPortal and HTPC in general, and this is my 1st iteration build that's currently running:

- Based on a HP DC7900 box off eBay
- CPU Intel E8400
- 6GB RAM
- AMD R7 240 discrete graphics outputting video & audio over HDMI to a Samsung full-HD TV (The integrated DisplayPort has no digital audio capability hence the discrete graphics)
- Intel 530 SSD as the boot drive
- A WD 4TB Red drive for media/data storage
- DVD-RW drive (Not dealing with Bluray and DRM friends for now)
- Windows 7 Ultimate (with hack for multiple concurrent login)

Problem:
When streaming recordings to a single mobile device alone the CPU load is 100% pretty much the whole time (HD quality). I need the box to show live TV on the TV itself as well as streaming a recording to a mobile device (or vice versa). It's desirable if I can stream to a second mobile device concurrently as well at FFDmpeg medium quality equivalent for both.

Question:
Without knowing all that much about the codecs how can I go about checking where ever hardware acceleration can be used is used? I guess in other words what codecs and settings am I supposed to be using? There are just too many choices, options and settings.
