I'm on windows 7. I've tried to install over VNC and RDP but keeps dying.. Any ideas?

In short: please install DX9 manually and then try the MP2 setup again.

Hi.
The issue is:

I've tried to install over VNC and RDP

This did not work due to graphics limitations on VNC and RDP. The installer is checking if the GFX card has enough features to run MP2 and an average VNC or RDP graphics did not have enough. You can not run an MP2 client on a RDP session and you also can not install MP2 this way.
As I also use RDP daily, I really know it is not working then.

OK, maybe I am installing the wrong thing. I am installing this on my home server, so I can record tv shows and stream to various clients in my home network.

Is there a server only installation package somewhere?

Is my only option to drag a monitor to my head less server, install, then disconnect the monitor?

There might be one thing you can try:
The installer consists of two parts:

1. A so called "bootstrapper" which can install dependencies at start (like the DX which fails now)
2. The "real installer" as msi file, where you are then able to select between single seat, client or server only

If you look at the post above, the msi is extracted to a local temporary folder: [1410:0D64][2016-02-14T22:09:47]i304: Verified existing payload: MainPackage at path: C:\ProgramData\Package Cache\{93D52AA4-8988-4926-BE92-E889F30EE3A6}v2.0.0.1509\MP2-Setup.msi.

You should copy it away from there and try to run it manually. This should at least skip the DX check, maybe you get further this way.

Hi.
The MP2-Server is running flawlessly when connecting by RDP or without any gfx. Only the client did not start as it needs more GFX that RDP can deliver.

Maybe the next release has a fix for such a scenario. Also it looks not that uncommon, you're the first I'm aware of who wanted to install the server on a headless system. I'm using RDP to maintain my HTPC from my desktop. Then I can't start the client. I've attached my TV to it, so I have a "monitor" if I need to install something. And if I want to use the client, ofc.
