I'm 75% sure that information comes from MP (via TsReader) rather than TV Server... but in case it comes from TV Server, I can say with certainty that TV Server (and TsWriter) currently don't check how many channels an audio stream has. It wouldn't be impossible. Maybe an hour or so of work, because it requires digging into descriptors which are different for DVB vs. ATSC and AC3/DD vs. AAC etc.
Then I think the answer for live TV is: currently you can't tell the difference without trying the streams.
For recordings, some skins have icons showing the media types, and I think that there are different icons at least for DD/AC3 2 channel vs. 5.1 channel.
No I'm on 1.12 Tried with both Titan and StreamedMP on recording. LiveTV OSD possibly does not have the icons like you said. However ther icons don't tell you if it's 2.0 or 5.1. It just says Dolby in both cases.

MP has adjustable audio delay. I don't know whether this works for all video formats, but it certainly works for TS files, and may work for MP4 files.
There is a slider that allows you to adjust the audio delay while playing a video. Press the INFO button on the remote control to display the OSD, select the "Audio" icon, and then...

Yes, works, thanks. Deselecting "Prefer multichannel audio streams" under "Video Player" (under "Players") gives me the stereo stream, by default, in television also. Thanks for your help. N.
