If you bring up the context menu in the series view, you should see a 'Filters' menu item. Enter that and confirm what you set.

When I choose the "All" view and then look at the filters context menu it says "All Episodes"

That means you have unwatched enabled, as its a toggle. Click on "All Episodes" to do just that.

I may update this post in a few weeks asking for more details on how to write my own view, but I don't think I will have time for that anytime soon.

It would probably be best to create a new thread for that. If you search you might find some examples as im pretty sure this has been discussed before, but note its not officially supported so you may encounter bugs.
