I think the MP log collector should not collect the MediaPortal.xml file, as it is the central file where all passwords are usually stored that are configured for plugins (some plugin use the databases to store this).
The only other option is to store config in a different file that is not part of the collection process. I will discuss this issue with the MP team, and see what conclusion we can achieve. Until that I'd recommend you to simply remove that xml from logs that are posted.

UAC prompt to use OnlineVideos

Or you want to be asked for master password every time you use OV?

I already get a UAC prompt every time I use OV - very annoying! Is there some way to avoid this?

Run MP as Admin or Disable UAC or Disable OV AutoUpdate.

Well, in OnlineVideos it is possible to add your own custom categories, right? I have got a category "Missed TV" with a few missed tv utils in it.

It's already possible to open a util directly, but I didn't find out how it is possible to open a category directly. I want to open the "Missed TV" category from Basichome directly.
