In MP, does recorded tv end up in "TV Series"
So if i'm recording Sinfield, will it be listed and available under TV Series or Recorded TV ?

It will end up in recorded TV.

TV Series is a plugin developed for MediaPortal by a 3rd party.

In theroy, if you make sure your filename saving convention for recorded TV (set using MP TV Server Settings) matches that required for TV Series to locate the required information (e.g "Programme_name - SXXEXX - Episode_name"), then you could just add the TV recordings directory to the list of directories within the TV Series plugin settings.

However, not all EPGs will include series and episode numbering iformation within them and so it may not work correctly. If TV Series can not find the episode details then if won't show it (or may show it as an "unfound episode" (depending upon your TV Series settings) - therefore only displaying the fanart for the series and no individual season and episode fanart/details).
