Make sure you don't edit the file C:\Program Files (x86)\MPExtended\WebMediaPortal\DefaultConfig\WebMediaPortalUsers.xml, but C:\ProgramData\MPExtended\WebMediaPortalUsers.xml. The first one is simply the default config and changes won't have any effect.
If you completely delete the WebMediaPortalUsers.xml file, it just creates it again. Instead, you should edit it and remove the admin user entry. I don't think changing the username will work, as the password is salted afaik. If I delete the user there and restart the MPExtended WebMediaPortal service, I can't login with admin/admin anymore.
Everything about this has been changed in 0.5 btw: WebMediaPortal now uses the users you have created in the MPExtended Configuration program, and changes are immediately effective.
