I still find it really interesting that it is enough to move the timeshift files on the server...

Owlsroost is the expert. Already tagged him a few posts back. He's based in Europe so is almost certainly still asleep. He may also be away on holidays. Not sure.
For now, the last thing I'd suggest you do is post fresh client and server log files with the buffer set to 2000 ms.

These look like the 'server' logs to me (TsReader is reading from a local file) - can you post the remote client logs ? (and use the MP logs collector please, so we get a zip file with everything in it - see link in my sig below for how to do this).
Changing the drive used for Live TV Buffering does have an impact.
So with the buffer set to E:\Recorded TV\MP Time Shift Buffer I have the problem. Change the buffer to C:\Users\Public\Recorded TV and the problems go away. Playback of Live TV is perfect on the client machine. C: Drive is a SSD drive. E: Drive is a 3TB Toshiba Canvio USB 3.0 external drive.
Also note that since messing with the BufferingDelayInMilliSeconds registry entry values, live TV has gotten much worse on the client machine even though the setting has been returned to 0.
