It's not a case of MP picking which languages to support, it's a case of someone creating the files in that translation,
So if you or anyone you know has the ability to do this, then Chinese can be included, but remember there are a considerable amount of updating done to MP\Plugins\Skins, that would need to be maintained and that is without the various dialects that may be wanted from different regions of China and its population.
I've just moved to China to study, maybe down the line I can help. The actual written language is split mainly into 2 scripts traditional and simplified. Simplified is used in mainland China, traditional is in Hong Kong and Taiwan.
I am new to media portal. but it's a bit sad MP doesn't support Chinese. If there is no programming involved, I can probably help with the translation.
I have tried to change the lauguge.xml and skin\fonts.xml to have gb2312 encoding but it still don't display chinese. And MP does not display file names in Chinese. I think there is something wrong in the core code of MP so it would not recgniz the 2 bytes unicode or something like that.

Basically, if the character is out of range for the preloaded fonts, this code uses DirectX to render the text. Hot. Make sure you don't have your graphics card set for high performance Direct Draw or the text might be fuzzy. Set to high quality, it works great.
