Most TV satellites are positioned in what is called geosynchronous (or geostationary) orbit over a fixed position on the equator. As you've realised, when you want to use a dish motor to access multiple satellites, you're going to need to move the dish from left to right (or east to west...) to follow the arc of the satellite "belt". Because most of us don't live directly on the equator, we also have to adjust the elevation ("look angle") of the dish. The further the satellite is to the east or west of your position, the closer to the horizon it appears. The closer to the horizon it is, the lower the elevation angle for the dish must be. You're possibly best to ask your questions on a satellite enthusiast forum... might get better answers than what I can offer.
