Did you replace default IPTV implementation (MPIPTVSource.ax file) in TV Server? If no (you're using default IPTV implementation), than you can specify NIC, but it have to be included in all channels. Of course, when IP address of your NIC changed, you have to change your playlist and scan for channels again. The URL in your playlist should be like 'udp://1.2.3.4@5.6.7.8:1234', where 1.2.3.4 if your NIC's IP address.
It's not patch, the filter you mentioned is complete rework with some enhancements. This trick will work only with mentioned filter. Yes, you're right, it's time to update the filter but I'm investigating some network problems with filter and filter update is postponed (maybe in MP 1.4.0). If filter will be included in MP, than GUI will come - it will be more convenient for end users.
I meant use MP client to try to spot how it's requesting streams for specific channels and then try to do the same with VLC.
TV Server development looks dead so I'm afraid you're going to have to figure that out by yourself if it's even possible.
