I see I can make a filter for 1080, 720, and SD. Is there a way I can combine 1080 and 720 together, or an SD only filter, then Everything else?
Sort / filter by only SD and HD ? (1 Viewer)

You can reverse filters, so you can make an "SD" one and a "Not SD" for everything else.
For your XviD/SD collection use: Filter -> Video Resolution -> equals -> SD
For your AVC/HD collection use: Filter -> Video Resolution -> not equals -> SD
