yes I also was using untangle for years and this version 10. or 10.1 has some problems..dns has changed you are correct about the dns has to be static was one of the first gotcha in untangle 10. 10.1 for any device that has a static ip on your lan has to have a static dns entry..
untangle is more locked down vs the 9.x meaning it will not let traffic out or in from the wan side as easy as version 9.x with out creating a bunch of rules in the router. you will find little help in the untangle forums.. I am afraid besides the easy fixes.. they are a paid support company meaning that is how untangle makes money is to sell support. the 3 people who often answer questions on the untangle forum are two employees that founded the company dmoris and jcoffe and guy named sky night that is a reseller of there product and that is how he makes money..
as far as your setup you are correct.. I think the multiple interfaces are probably confusing the client or server side.
I would try and install the server on pc with single interface and ip address same for the client you are using one interface and one ip address.
Get a cheap plastic router and put in place of untangle for testing and see how the application works then.
I have done this before with untangle had to pull it out of the mix to fix a problem and see if it was a networking problem on the lan side or the router causing some problem like dns or dhcp etc..
