With the TV server and multiple clients, can you watch different channels on different clients?

Simply, yes you can.
A more indepth answer is as follows
If you have only 1 TV Card, TV Server will be limited to only stream out 1 selected Channel. If this channel has differrent streams with in it, then a second client can request a second stream utilising this one card. For example, In Australia, our Free to Air Digital TV Stations (7 9 & 10), transmit 3 different streams on the same channel ( 7SD1,7SD2, 7HD). So if I only have 1 TVCard, all of my clients can watch any of the streams from on selected channel at a time. 1 client 7SD1 and another 7HD).
So the more cards you have, the more options you have. It is always suggested to start at 2 TV cards (if budget allows) as this will give you some flexibity. I will be getting access to 15 channels next year and will need to expand to 3 or 4 TV Cards to ahndle the possible recording viewing demand of 4 TV CLients.

I switched back to MePo 1 some time ago, and havent really used it that much.

Virtuel Clone drive is installed, and it can mount the ISO file.

I was just tinkering with a few settings in the MediaPortal configuration and am happy to have found the cause of the problem.
Disabling the option "Single seat setup: force RTSP usage" under "TV/Radio", "Advanced Options" resolved the issue.
After I disabled this option, I was able to delete the recordings the first time...
