I do not recall seeing a place where the log level of TVService can be adjusted.
I would suggest waiting for the next time it happens and then attach all files from the TVServer log directory:
Windows XP = C:\Documents and Settings\All Users\Application Data\Team MediaPortal\MediaPortal TV Server\log\
Windows Vista = C:\ProgramData\Team MediaPortal\MediaPortal TV Server\log\

I always have DVB subtitles enabled in "MP Config", but I actually switch on subtitles only for those films that have deafening sound effects and music, combined with inaudible dialogue. I have never noticed the problem that you have described, but I also use the EVR renderer, and not the Madvr renderer. So...
