1) Do we always have to choose the same audio language when tuning a channel on the client ? (WAF would suck here)
2) Does the client persist the last used audio lang. so that when tuning the channel the client remembers what audio lang. to set.

I think it's best if you post you setup and logs. If you card is Hybrid, that might lead to problems for example.
I use composite all the time since TVEngine was released. I use an STB and it's connected to the server trough 2 Composite inputs. I use a Hauppauge PVR500 at the server.

I have done further tests.
I think error is only partly related to MP.
From a second Server everything works fine.
Funny is, that on Server 1 (original) even VLC cant display a stream, but MP TvClient does.
On Server 2, VLC shows localy and remote any stream, also MP TvClient.
I think now on Server 1 something with the network...

you don't need to remove the cards from the client, as once you have installed the tvplugin it overides/ignores them anyway.
