You want TV Server Config -> TV Channels
From there you can create channel groups and sort them as you wish. Then, from within MP you can choose which group to display. Not sure how Bleazle skin implements this but others usually have the channel group at the top of the TV Guide grid.

MP does not have inbuilt functionality to write back to your files.
For movies, if you use the MovingPictures plugin, there is a script floating around that can read the MovingPictures database and store a nfo/txt file with meta data in the same directory as your movie.

Sometimes when i watch a recording after about 10s the pic stops and the audio continues.
After another 10s or so the pic starts playing but the pic will be 10s behind the audio......after a few secs the pic speeds up to approx 3x normal pb for a few seconds until it catches up the the pic.....then all is well for the rest...
