It certainly does matter. The idea was that TV Server should be completely idle, so starting a recording pretty much throws those results out the window. Are you still able to reproduce the leak if the schedule doesn't start?

It depends on what you're recording. Digital signals are recorded as-is with any audio tracks included by the channel provider. Analog only records to stereo with cards that have software encoders. If an analog card had 5.1 channel hardware encoding then I'm honestly not sure what would happen - I don't know of any such...
